The Tasty Adventures of a Hungry Vegan

I'm Crysta. I was born in Switzerland, grew up in NYC and Sea Cliff, New York, and am currently studying a "Food and Environment" major at UBC, Vancouver. I am vegan, love food, plants, city life, and I adore cooking.

Peanut Butter & Banana Pancakes!
The morning after our avocado pesto dinner, Samm and I made these glorious pancakes.
We really just added some peanut butter to a regular vegan banana pancake recipe:
1 cup flour
2 tsp baking powder
1 ripe banana, mashed
1/4 cup almond milk
1 tbsp sugar
about 1/2 cup creamy peanut butter
Mix flour, sugar, and baking powder in a bowl. Mix in mashed banana and almond milk. Add peanut butter and mix thoroughly. Heat pan with canola oil, ladle batter into pan in desired size. Flip when pancakes bubble and are golden brown on the edges. Slather on some peanut butter to hot pancakes, sprinkle with cinnamon, and pour some maple syrup on those bad boys. Enjoy your glorious breakfast.
